King prawns marinaded in a delicious combination of Star Anise, Szechuan Pepper, Ginger and Cinnamon, stir-fried with pak choi and shiitake mushrooms and garnished with Sesame Seed, Chilli and Coriander Leaf for a light and healthy stir fry.
STEP 1In a pestle and mortar grind the Star Anise and Szechuan Pepper into a fine powder. Add the Ginger, Cinnamon, rice wine, soy sauce, tomato purée and water. Mix well.
STEP 2Add the King prawns and coat in the marinade.
STEP 3Heat the oil in a wok, add the prawns and the marinade and stir fry for 2 minutes until they turn pink. Add the pak choi, shiitake mushrooms, Sesame Seeds, Coriander Leaf and Crushed Chillies and stir fry for a further 2 minutes. Serve immediately.
