This delicious dish of duck breast, with an orange, kumquat and Marjoram sauce, can be cooked quickly and easily in the microwave.
STEP 1Pre-heat a browning dish in the microwave oven for 3 minutes or according to manufacturers instructions.
STEP 2Meanwhile, make deep cuts over the duck skin. Remove the browning dish from the oven and add the duck breasts, skin side down to the hot dish. Allow them to sizzle and then cook on HIGH for 1 minute. Remove the duck breasts and wipe the dish clean. Cover the duck breasts with kitchen paper and leave to stand whilst cooking the sauce.
STEP 3Add the marmalade, kumquats, Marjoram and orange juice to the dish. Season, cover with a lid and cook on HIGH for 3 minutes. Remove the lid and cook for a further 2 minutes. Return the duck breasts to the dish, spoon the sauce over and cook for 2 minutes. Leave to stand for 2-3 minutes.
STEP 4Stir the Perfect Shake Garlic & Herb Mash Special Blend into the mashed potatoes with a knob of butter. Serve with the duck and sauce.
