Ingredients: 2 tbsp olive oil; 2 onions, diced; 2 tsp garlic granules; 2 tsp turmeric; 2 tsp cumin ground; 2 tsp garam masala; 400 g (14 oz) dried red lentils; 800 g (28 oz) tinned chopped tomatoes; 400 ml full-fat coconut milk, well mixed; 1 litre (35 fl ozs) vegetable stock, preferably homemade or very low salt; 1 tbsp wholegrain mustard; 1 small butternut squash, peeled and cubed; 100 g (3.5 oz) fresh spinach; Schwartz Salt and Pepper, to taste; Naan or chapati, to serve; Small bunch coriander, roughly chopped
