Requeson Mexican Cheese Taco Recipe

Requesón is a deliciously salty, spreadable Mexican cheese (imagine a more acidic, creamier version of ricotta) which is taken to a whole new level when combined with our zingy garlic and coriander Herdez Yucatan Taco Kit.

For the homemade requesón (or substitute for a 500 g ricotta):
1 l full-fat milk
240 ml tub buttermilk
2 tsp lime juice

For the tacos:
2 small ripe avocados
250 g cherry tomatoes, sliced
2 g spring onions, finely sliced
Lime juice, to taste
Salt and pepper, to taste
Freshly chopped coriander, to garnish
Cooking tip
- Adjust the amount of Herdez Yucatan Seasoning to suit your taste and whether you prefer a subtler or bolder flavour.
COOKING INSTRUCTIONS
- 1 For the homemade requesón: pour the milk into a heatproof bowl, add the buttermilk and lime juice and set over a pan of barely simmering water. Heat for around 10 minutes - or until the mixture curdles. Strain through a cheesecloth (or J-cloth) lined sieve set over a bowl and leave to drain for 1 hour. Spoon into a bowl, cover with cling film and chill until ready to use.
- 2 For the tacos: heat the Tacos according to packet instructions. Prepare the avocado into thin slices.
- 3 Add a generous amount of requesón (or ricotta) to a warm taco and spread in an even layer, top with tomatoes, thinly sliced avocado, spring onions and lime juice. Sprinkle with Herdez Yucatan Seasoning, to taste (see Tip). Garnish with coriander and drizzle with the Salsa Verde, wrap and enjoy!
